Farm Girl Fresh Bean Dip

I am always looking for different ways to incorporate protein rich food in my menu planning and a great way to accomplish this is by adding bean dishes. In our book, Eating Pure in a Processed Foods World®, we include some traditional recipes like Chili, Hamburger Bean Hotdish (casserole for those of you in other parts of the country) and Grandma’s Baked Beans (now I am sidetracked thinking about how my grandma always brought her famous baked beans to every family gathering).

These bean dishes include all different types of dried beans: navy beans, lima beans, kidney beans and black beans. By including beans in your diet, you will add a food high in fiber that is slow to digest, making you feel full longer.

This Bean Dip is a great appetizer to take to a party. People love it!

Bean Dip Recipe

2 cups refried beans (see recipe below)
1 tablespoon taco seasoning
2 medium avocados, mashed
1 1/2 teaspoons lemon juice
1/2 cup sour cream
1/2 cup sliced black olives
1/4 cup diced onions
1/2 cup chopped tomatoes
1/2 cup shredded raw cheddar cheese

Combine beans and taco seasoning. Stir. Spread on a 10 inch plate. Mix together mashed avocado and lemon juice. Spread on top of bean layer. Next spread the sour cream over the layer of avocado and sprinkle with olives, onions, tomatoes and shredded cheese. Serve with lime chips.

Makes 8 to 10 servings

Refried Beans Recipe

2 cups prepared black, navy or lima beans
1/4 cup water
1 tablespoon sesame oil
1 teaspoon salt
1/2 teaspoon onion powder

Place all ingredients in a blender in order listed and blend to desired consistency.
