Do you have a bumper crop of broccoli in your garden this year? Are you looking for ways to preserve it for later use? Here are 5 easy steps to freeze broccoli.
Remove leaves and woody portions.
Separate heads and immerse in a brine (1 cup salt to 1 gallon water) 30 minutes to remove insects. Rinse and drain.
Blanch 3 minutes in boiling water.
For more information on blanching, checkout page 66 in our book, Eating Pure in a Processed Foods World®.
Drain and immerse in cold water until completely cool. Drain and pack into freezer bags or containers.
Frozen broccoli can be tossed into soups and casseroles. If you don’t have a garden and you want to freeze some broccoli, check out your local Farmer’s Market or your local food coop.
